Kitchen knife Profile examples

Here are some examples and explanations of a few Profiles to give you a taste and an idea. If you have a very specific idea of what you want, that is what custom orders are all about! If you are not sure we can work through your requirements when your name comes up.


Gyuto

Western style double bevel chef knife.
My Gyuto have extreme geometry, relatively thick on the spine allowing convex geometry with extreme thinness at the edge, allows for most efficient cutting.
I am flexible to making relatively flat profiles, or with a bit more belly towards the tip. Common lengths are 210mm, 220mm, 240mm, 270mm. Height can vary between 48mm and 55mm.

Sujihuki

Longer, more  slender knife for slicing food. Again in a double bevel format with convex geometry.  Common lengths are 210, 240, 270, 300mm, Suji are less tall at the heel, around 40mm, though if a more versatile hi bred knife is required I will make Suji taller.

Petty

Small, typically slender chef knife ranging in size between 100- 180mm.

Nakiri

Could be described as a not so tall, thin cleaver for vegetables or a Gyuto with no tip. Common sizes, 180, 200, 220, 240mm. Height around 50mm at the heel.
I make these in either hollow face geometry with flat geometry, or convex geometry. 

Cleaver

I make Cleaver up to 80mm in height, thin geometry for vegetables and general cutting or thick cleaver if required for bone and butchery.
I offer vegetable cleaver with special hollow geometry on the faces, with flat double bevels. This geometry takes longer and therefore costs a bit more over convex geometry.  Price on application and depending on the height of knife etc.

Paring knife

Sub 100mm knife for working in hand. 
Please note a Parer must be ordered with a larger knife not on its own to make up a custom order.

Other Profiles

 Honesuki and larger Garsuki - Typically thicker geometry ,these are for boning chicken Mine are double bevel. Popular lengths 120-220mm

Hankotsu - Japanesse Boning knife, slender, blade with a fine tip, 140mm length. This is not a thin flexible knife, About 3mm thick,  robust, yet slender for getting around the joints of meat.

Wa handle Steak Knife- British Style 220mm butchers steak knife profile , Similar but smaller than the American style bull nose,  but with a Wa handle.  In this case tang would extend right though the handle. For Multiple Butchery tasks.



Note - These profiles are just a starting point. I will make any profile custom to you including Cleaver, though prices may vary from the price list for extra deep knives.

Blade Material examples and pricing

Composite damascus.

I am offering some limited sets in a unique composite of damascus for 2014.
These are combinations of bars of damascus both twisted pieces and mosaic. This idea is an evolution of the 9 bar turkish twist special hollow cleaver I made in 2013. 
The twists and basket weave sections are in a high contrast damascus with pure nickel. The edge material is a fine blend of choice carbon steel damascus to have optimum hardness/toughness.

Stainless Damascus clad.

This will be offered in a random stainless damascus made from 304/430 stainless steel. A ladder pattern in a san mai format is also possible at a premium. I have a choice of core materials available, a high carbon steel or a less traditional wear resistant pm steel.

Mosaic Damascus 

My mosaic damascus has also evolved into a combination of damascus materials for high contrast and different edge damascus.
For 2014 I will be offering my latest form of the feather pattern, with high contrast damascus with pure nickel on the spine half, and my special combination of carbon steels on the edge side of the blade.
In this format of high contrast/optimum edge material I will also be offering.
Basket weave.
A radial w's pattern.
You will have to bear with me as these latest versions of these patterns evolve.

IMPORTANT: 
Current examples of all these patterns will be made in the new year so you can make your choice upon seeing the options. So unless you are sure you want Feather damascus just tick Mosaic Damascus on the order form and you can decide later.

Handle options

Handle Shape

Choose from traditional octagonal Wa.
Ocatgonal Wa with front taper.
Diamond shape handle. This is my own design has a taper at both ends.
Handle dimensions can be tailored to fit your exact hand size.

End caps and spacers

I have a variety of different materials available in metal/colours. I will select something to go with your design with some choices at the time of making.
A few ideas below...
Copper/brass and nickel silver in various widths,
Mammoth tooth
Many pieces of burl or wood,
Bone, and faux bone,
Jadeite,
Carbon and stainless damascus.
Many colours, 
Precious metals are possible, do please enquire with you specific wishes.

Damascus ferrule and end cap.

With carbon damascus knives, ferrule and end cap are made in a visually complimentary damascus to the blade material.
In Stainless damascus san mai knives the material is a more traditional straight laminate in 304/430 stainless, which has a subtle beauty.
A new feature I am offering with customs this year is a fullered/grooved spacer in Nickel silver or precious metals if you choose. This between a split ferrule. See the image showing this feature in the gallery.
