Forged Geometry Hibred, (Tall) Suji 250mm
Forged Geometry is the culmination of years of experience in san mai, forging and heat treatment. These are nice and thick on the spine, but forged under the power hammer very thin into the middle and excellent taper, the result is the perfect balance of a stiff knife that has weight and balance, which will cut effortlessly, no wedging and incredible food release. The only grinding on these is tidying the profile and grinding the very lower bevel which is then stone finished. The convex lower bevel and the break in angle create not only food release but a break in friction, which is the secret to a great cutting knife. the result is a knife that feels far more laser like than its weight and stiffness let on..... And being san mai the core steel can be full hardness for edge retention.
And being wide bevel knives these are the easiest to maintain the whole bevel on any stone you may have, an 800 g waterstone is ideal to work the whole bevel, higher if you have the experience.
This Suji is quite special, very thin and extreme forging, it feels light and will be a laser to use but without the flex and cheap feel!!! fantastic line knife....
