230mm Forged Geometry Gyuto
Forged geometry means the whole geometry of the knife is established by forging , not just the dramatic taper but after forging the middle and edge of the knife are very thin, then blending into the thicker spine. This is all achieved under heat , in my power hammer. After grinding the lower bevel you therefore have the perfect geometry, thin lower geometry with a break in angle breaking friction and giving food release, combined with a thicker spine give a sturdy feel with no flex... combine this with the ease of maintenance and practicality of wide bevel san mai and you have the perfect carbon steel knife.
