Special Damascus san mai, 230mm Gyuto, Ground Geometry.
This a special edition run of three Gyuto in the same materials. The materials are a mild steel and nickel damascus. It is a special pattern which involved laddering layers, interlocking them them upsetting on end, when compressed it makes a sort of W's pattern as this is compressed further in san mai it make a beautiful wood grain pattern with some random W's remaining. I produced 3 Gyuto from this pattern, all have a very hard sc125 pure carbon steel core.
This second knife had a much high volume of starting material, was forged oversize and thickness then the entire geometry ground in, in order to show the difference in pattern, you can see there is a more vivid part of the pattern in the faces of the knife, less layers in the edge. This follows my usual philosophy of geometry, its very similar thickneses to the forged knife at the top of the bevel, but as its more squat , it has a thicker firmer feel, very controlled cut, with nice release, it does everything very well, and no flex, and boy does it look pretty!
The Bevels are stone finished with brief etches in between, you can easily maintain these on stones without retching as the material shows contrast as you might finish a wrought iron san mai piece as a narrow bevel knife.
