Special Damascus, san mai Gyuto, 235mm, Forged Geomerty.
This a special edition run of three Gyuto in the same materials. The materials are a mild steel and nickel damascus. It is a special pattern which involved laddering layers, interlocking them them upsetting on end, when compressed it makes a sort of W's pattern as this is compressed further in san mai it make a beautiful wood grain pattern with some random W's remaining. I produced 3 Gyuto from this pattern, all have a very hard sc125 pure carbon steel core.
This third Knife is my Forged geometry, the change in thickness into the middle and into the knife is established by forging, as you can see there are very little layers showing on the surface and all the layers have been pushed into the bevel..... The forging also enables the knife to become much taller given the same material, and this is a Tall knife for its length... 64mm height..... It does everything superbly, one of the nicest ive ever forged, the release in awsome on this , it does everything very well, no flex, sturdy just right. The two things to note are the height, and there is a little more belly on this one to the tip, but it has a decent flat spot also :)
The Bevels are stone finished with brief etches in between, you can easily maintain these on stones without retching as the material shows contrast as you might finish a wrought iron san mai piece as a narrow bevel knife.
