Extra tall, special edition, damascus forge geometry, western Gyuto - 265mm
This is a very special piece that took a lot of time and love to make. The Damascus is made from some reclaimed Wrought iron, which was folded several times then combined with nickel a very little bit of steel, the aim of the materials is to produce a super fine watery pattern that contrasts beautifully from sharpening the bevel on natural stones and finger stones:) The core is of 1.2442.
This then is the first in this special material and celebrates the flowing process fully with the most extreme forge geometry I have made to date, 265mm length and a 7mm to 1mm taper both on the spine and hollow forged into the edge. The knife is very tall 74mm, I would not make a taller Gyuto, It is truly a beast, a beast that has all the advantage of that weight with thin geometry.
I have further celebrated the piece with a hand shaped Western handle in finest two tone ebony, A sculpted butt cap in the original iron...The Handle is perfect for hammer or pinch grip. and to top it off a 24k Gold leafed logo.
Here are the Full knife specifications.....
Blade Length - 267mm, measured straight line heel to tip.
Height - 73.5mm
Thickness at forged bolster - 10mm
Thickness over heel, on spine - 7mm.
Forging thickness at the bevel, heel - 1.5mm Tip 1.1mm
Handle length 152mm
Balance is 39mm ahead of choil,

This is a fantastic high end forge geometry knife I could recommend to anyone who enjoys a taller weightier knife, for controlled work. If your a line chef doing 12 hour prep sessions I think this could be too much weight;)
As is included in this price this knife will come in a knife slip with certificate and includes worldwide shipping.
I have the materials prepared for a Matchy match ebony Saya for this one, the cost of this will be £200, if you would like the matching saya, add it as a note on check out I will invoice separately.
