I had very specific things in mind when I forged this Gyuto , a heavy, stiff knife that keeps thickness on the spine until the last part of the taper, yet laser thin down into the geometry of the knife and it’s deadly thin down low all the way from the heel to the tip. The result is a very consistent low effort cut from heel to tip with great food release. 260g weight making cuts effortless on such thin geometry.
The handle is my right hand D design, it’s very comfortable and this is some vibrant dyed black ash, the finish , detail and colour in the pippy burl is outstanding. I capped the handle in red/orange micarta.
I got a lovely bronze to purple fade on the torch blued ferrule/choil.
