A big heavy Gyuto with epic geometry. This is my work horse weight,m the weight allowing lower geometry to be thicker, lower bevel bit wider than normal to allow me to tune that convexity to a perfect and satisfying blend of release, control of cut still with the lack of friction associated with my thinner knives, you just get more of a kinetic sense of the pop of release. Tip will not hesitate in onion, it’s a fantastic cutting experience.
This one then is in my own stainless cladding with pure nickel and glassy hard c105 carbon steel at the core.
I have bronze heat finished the bolster whilst the core is a nice deep blue. This goes splendidly to the insanely dense Siamese rosewood, it is a piece of crotch and has an insane ladder grain when you look closely, the bolster is musk ox, so this piece really is a bit special.
