270mm textural damascus clad Gyuto.
Spectacular combination of soft iron/steel/nickel Damascus cladding and deep texture from the final stage of cold forging. You can see all the elements at work together and how precisely this piece was forged to shape in profile, taper and geometry. This is a beefy knife, with weight yet relatively thin low convex bevels, will cut with control, yet very low friction and food release. The core is c105, glassy hard, I’ve never known a steel that can have such good toughness, for such a glassy feeling edge that feels fabulous on the stones.
I’ve chosen a relatively simple oval handle design, slender at the front allowing a nice choked up pinch grip for this large knife. I love these simple material , stag and black palm.
The Damascus mix is subtle on such a low narrow bevel, but very rewarding to polish with finger stones if you are so inclined, there is allot of detail and time in this steel all around.
