This little Gyuto is rock solid, due to spine thickness with an awsome progressive taper , lethal thin tip.
Geometry of the low bevel is blended into the shoulders nicely, giving great balance of feel, food release and le friction cuts, with a nice thin tip for effortless onion dicing.
This is in my Amco pure iron clad c105. Amco pure iron is the purest form of iron that can be obtained, and it is used industrially in steel making where purity is paramount and artistically instead of wrought iron. It has amazing forging properties, hot and cold. In the core is old stock c105, a pure carbon steel with no alloy, just very clean steel with unbelievable toughness even used here as hard as it can be at 65hrc. And feels great on the stones😁
