280mm Special edition Forged Geometry Sujihiki.
Forged geometry knives are carbon san mai, always 1.2442 core , mild steel clad , sometimes with a pure nickel carbon barrier. My heat treatment is full but edge stable hardness of 65hrc, this is where this steel feels and performs best.
Forged geometry means the whole geometry of the knife is established by forging , not just the dramatic taper but after forging the middle and edge of the knife are very thin, then blending into the thicker spine. This is all achieved under heat , in my power hammer. After grinding the lower bevel you therefore have the perfect geometry, thin lower geometry with a break in angle breaking friction and giving food release, combined with a thicker spine give a sturdy feel with no flex... combine this with the ease of maintenance and practicality of wide bevel san mai and you have the perfect carbon steel knife.
This special edition has a pure nickel carbon barrier , as well as acting as a barrier to stop any carbon diffusing into the cladding during forging, it looks pretty too:) The knife comes with a nice clean 800 grit Kasumi with a polished edge ready for work or further polishing with ease:)
The knife also has a fabulous super high grade one piece desert ironwood handle, the most stable and beautiful material available to knife makers in my opinion.
