Part of triplets of the same influence of clay pattern. Beautifully cloudy hamon with lots of activity. This is the full hardness heat treatment of this epic super clean small batch carbon steel. The edge is 65/66hrc, and feels glassy hard on the stones, yet a pleasure to sharpen, bur just pings off. Care should be taken as with all honyaki but you will not find the steel prone to microchip with normal use like some makers white 1.
I have made these with my standard handles to make them more accessible and some very nice pricing for this level of workmanship. Handles are in wedge and bright red spacer.
This Gyuto turned out fantastic, very light and nimble thanks to thicker spine, nice and thin down the middle with a beautifully convex lower bevel, just the perfect thinness to match the weight for a perfect cutting experience.
The hamon like the others has a gorgeous smoke on the water feel, with activity playing down the spine and below the hamon. We also have some prolific banding on this one which adds to the interest and smokey effect. This took a bit more polishing to make the most of this as you can see from the detailed pics. Light, thin beautiful , absurdly good steel... a wisely chosen weapon for a smaller work area indeed.
There is no flex on this knife, its super stiff thanks to the geometry, and allowing some partial hardening and activity on the spine...
