Just the perfect size for a Nakiri in my opinion, making this a perfect allrounder to punch above its weight on limited board space.
The Nakiri is relatively light due to the way the forged geometry works it keeps its weight in the spine and into the choil. This will simple fall though food with good release.
The steel is sc125, the cleanest carbon steel in the world, with a beautiful Hamon showing clouds and activity above and below, there is also the bonus of some gorgeous banding on this one. I have eased the heel on this one to make it a little more user friendly for some not accustomed to super sharp knives. The steel is at full hardness 65/66hrc, will hold an edge for a long time, but care should be taken around bones and grit so as not to chip the edge, though the steel is still very tough.
I have wrapped this package up with a high grade stabilised handle in horse chestnut burl, red/white spacers and wedge ferrule.
