Same material as the 270mm Suji, Very fine feather pattern in double high carbon for superb edge characteristics and gorgeous subtle pattern.
This is a full geometry Gyuto with zero flex, convex and very thin at the edge.

Geometry - 3.8mm over the heel, forged taper is sudden then gradual to the tip. This is my fully convex geometry, making great use of the weight of the knife with super thin edge geometry. Steels are double high carbon at 64/65hrc so edge will not distort on a very thin edge like this and edge holding is superb.
Handle - Elder burl ferrule, horn and copper spacers complementing the gorgeous Mango as the main block.
Balance is 10mm ahead of the heel, this knife feels and cuts superb!
