Here is the first up in water quenched SC125, These are forged entirely taper and geometry, then water quenched with clay coat. The geometry and clay with correct technique and temperature gives the beautiful differential hardening you can see. The steel is SC125 our very own european white 1 at last! Very fine grained and extremely hard, at the same time sharpens like butter, lovely steel! This knife is very stiff, its a medium weight knife, the lower bevel is entirely stone polished this blends perfectly with the semi mirror finish above the lower bevel, will be an utter joy to maintain especially if you have at leat one medium/high natural stone or some finger stones to use. But comes fiercely sharp and will stay that way with only a strop every now and then for a long time!
