Note- I am taking these knives with me to the JNS Gathering to do the final Polish with some of Maxims stones and powders, therefore these will ship on my return on the 31st, unless of course you are attending the gathering in which case I can give them to you in person, let me know on check out :)
This is a rare and beautiful Pair, Honyaki SC125, incredible steel, comparable to white 1 with a little more toughness and even less impurities , (less prone to chip at full hardness). These are both clay coat, water quench, tempered to 65/66hrc. Both blades were forged geometry prior to heat treatment, the clay and geometry and careful heat treatment give the beautiful hamon. The hamon is enhanced during polishing with natural stone grit. The whole lower part of the knife is polished as the final edge is put on blending with natural stones and finishing with the slurry from the stone, so easy maintenance already set up for stone maintenance on the whole lower bevel.
Both have stabilised alfzelia burl handles, with mammoth raffir spacer I also added a special detail of basket weave nickel damascus fittings nicely deep etched on the ends. The western handles are very comfortable and balance these fine knives perfectly.
This is quite a compact and nimble pair, and I would say perfect for the home carbon steel enthusiast.
Knife specifications -- Gyuto
Blade length - 175mm
Height 48mm
Spine thickness, 4mm entering handle, 3.5mm over the heel, blade tapers rapidly, and due to the way the geometry works this knife is very nimble and laser like given the spine thickness, but with no flex.
Weight 154g
Balance on heel.
Geometry follows the forging, knife thins down in the centre with compound lower bevel, perfect blend of release and super fine geometry a very fine and nimble knife, yet no flex whats ever.
Suji -
Blade length - 215mm
Height - 38mm
Spine thickness 5mm entering handle, 4mm over the heel, tapering rapidly. The geometry is slightly meatier than the gyuto, to give perfect action on the slice. Making the perfect complement to the finer geometry of the Gyuto.
Weight - 172g
Balance on heel.
These come each with their own knife bag and certificate included, if you would like a custom box or leather sheath made for the pair let me know upon check out.
