These are a more affordable line of Honyaki knives from me. With a more functional finish very well executed, and attractive simple wa handles. They are forged to shape from sc125 steel, the cleanest carbon steel made in the world at this time. The steel is similar to white 1 in regard to extreme hardness, butter smooth feeling of cutting, and buttery smooth sharpen and debur. The steel is gorgeous and creates a fantastic Hamon with the right understanding of shallow hardening.
The finish on these is a very pleasing and even 400 grit finish, enhanced with a brief etch followed by polishing below the hamon with natural grit. The lower bevel is also stone finished and blended up making future sharpening very easy for you. The finish is really beautiful, the scratch pattern is deliberate and well executed and polished enough to show all the fantastic details of the hamon and activity as you move it in the light. Its a more practical finish than a full polish for everyday use without disappointing on showing off the incredible heat treatment process.
This Gyuto sits happily in the medium weight category, Thick entering the handle, tapering quickly, and extreme taper to the tip, Knife is stiff with very little flex, the knife geometry was forged then ground, its thin down the centre of the knife, with the break in angle into the lower thinning bevel that gives beautiful food release, yet with no hint of wedge. My geometry combined with this amazing steel is a very happy combination:)
