This is a fantastic beast, my usual weight , thickness and grind I know so well. Knife is thick on the spine, zero flex yet thin down the middle of the blade with a compound lower bevel, stone finished up into the lower bevel. this cuts like a beast. Kept the Hamon high on this one and it turned out really gorgeous, definitely a contemporary look to a traditionally forged and shaped chef knife. The steel is the amazing sc125, similar the white 1, even cleaner. The handle is in the most gorgeous piece of horse chestnut burl I have ever seen, with a bog oak ferrule. I kept it simple the wood speaks for itself, both these woods are premium stabilised materials.
